Our cuisine, driven by the creativity of our chef Stefano Nicoletti, uses only the highest quality raw materials, 100% Friulian and exquisitely zero kilometre, with the utmost respect for the seasonality of the products, observing the Friulian culinary tradition and winking at the innovation.

Casarossa ai Colli is a farmhouse located deep in the Friuli’s picturesque hilly landscape. Casa Rossa’s kitchen will make you savor the typical dishes of Friuli’s traditional cuisine. The menu is completed with distinctive dishes of the national cuisine. What really sets The Kitchen apart is the origin of the ingredients, exquisitely local.

Casa Rossa is in fact the highest expression of the co-op Par Plasé, a collaboration between producers that supply exclusively local ingredients. This supply enables our chef to reinvent with creativity and attention to details Friuli’s extensive culinary tradition.

DIRECTLY FROM THE LOCAL FARMERS

Vegetables are selected seasonally and foods are carefully cooked to preserve taste and texture. Homemade, low processed dishes made with local ingredients are the base of our proposal. That’s why our menu is continuously evolving.

We would like The Kitchen to be a new way to tell tradition, to be a unique journey between ancient flavors and innovation. A healthy cuisine, balanced, seasonal, local, to fully appreciate our culinary tradition.

A MODERN TRADITION

I like to define myself more as a cook than a chef, I like to value local ingredients interpreting them in a chic and modern way. My homemade products such as pasta, bread and desserts are my distinctive trait, as well as my strength. This without overlooking the preparation of meat and fish dishes. I pay special attention not to waste anything when cooking, that’s why my dishes can generally be prepared quickly, using local ingredients like the ones offered by the Par Plasé co-op: every week they supply seasonal produce and fruits, the best local meat cuts and selected dairy products.

THE SOUL OF THE CASAROSSA AI COLLI

Buying Casarossa in 2001, after a past between computer science and finance, Alessandra gave life to a dream in the drawer: to build step by step a place out of time, a front of peace and serenity, through the recovery of ancient values, lost rhythms and authentic flavours.

In many years, with the help of family, friends and guests, Alessandra has shaped year after year this corner of paradise, made of simple things like her.
